Quattro Formaggi ++

Mathias' favorite pizza is 4 cheeses, or Quattro formaggi as it is called in Italian. To make it even more delicious, you get it served with 6, blue mold, parmesan, chevre, mozzarella, cheddar and jarlsberg. You don't get any rawer than this.

Approach

Put the flour and salt in the baking bowl of the food processor. Pour the water into a liter measure and dissolve the yeast in lukewarm water. Pour the water with yeast into the bowl and knead the dough at low speed for 10 minutes, before letting it rest at room temperature under the lid for approx. 45 min - 1 hour. Stretch the dough and shape it into a sausage. Divide the dough into 3 pieces and fold each piece of dough inward until you get a dough that looks like a ball. Pinch the opening and put the dough in a mold with a little olive oil. Let the dough rise under the lid for another 45 min - 1 hour. Now all you have to do is work out the dough with a little flour, and make your pizza!

 

Take sour cream and creme fraiche and mix together in a bowl. Add a little salt and pepper. Truffle oil, parmesan, lemon juice and lemon peel are mixed into the mix, together with chopped basil. Stir well. Finished!

 

Top the pizza dough with sauce and cheese. Bake in the oven to PERFECTION! Top with herbs, spring onion or truffle and enjoy!
