Corn bread

Cornbread is a classic you can not miss for a proper BBQ evening. There are many different types, but the main rule is that the bread must contain cornmeal. We have made a variation with a little sweetness, which we think fits very well with barbecue. If you serve a little garlic butter or browned butter mayo, it will be extra juicy.

Ovenproof dish

Approach

Heat the butter, fry the corn and cool it down to room temperature.

Mix the dry ingredients. Whisk the eggs and condensed milk until smooth and fine, then add the dry ingredients. Whisk this together well, the consistency should be like a waffle batter.

Grease aluminum foil or baking paper and put it in an iron pan or ovenproof dish, and add the batter. There must be a minimum 3 cm high aluminum foil border all around. Grill at 220 °C direct heat for approx. 20 minutes.

Great for most grilled food, especially brisket and ribs.
