Cava Sangria
Approach

If you do not have mint brine, boil sugar and water 50/50 with the mint stalks and leave to simmer while you do the rest.

Cut fruit and berries into slices / pieces and put in the glass or a pitcher. Squeeze over lemon and lime juice so that it does not oxidize.

Strain the mint sheet and mix with everything else liquid except the wine. If you want to prepare this for the party, you can mix everything except sparkling wine. Then you add it just before serving, so you do not lose the carbonation in the wine.
