Approach
Light the grill and prepare it for smoking.
Put the apples on indirect heat and hot smoke until they become soft, approx. 30 minutes at 180–200 ° C. The grill may have a lower temperature, then the apples must be grilled for a longer time and you get a smoky taste.
Remove the apple core, cut the apples into pieces and place in a saucepan with sugar, apple cider vinegar, a little salt and ground black pepper. Bring to the boil and simmer for 5-10 minutes. Mix everything in a blender or use a hand mixer until you get a nice and smooth puree.
Season with salt and good with black pepper.
Tip: Here you can use the type of smoke shavings according to how strong the smoke taste you want. If you use Hickory, for example, you get a stronger smoky taste, while if you use apple wood, you get a milder and kinder smoky taste. Adjust with sugar and vinegar according to how sweet or
sour you like the sauce.
