Approach

Classic Bratwurst with leek compote & pickled red onion

CHICKEN COMPOT
Cut and wash the leeks well. Use most of the white part on the leek. Carefully fry the leeks in plenty of good dairy butter until tender. Season with salt and pepper.

JUSTED RED ONION
Boil vinegar, sugar and water and pour over the red onion. Leave to infuse for at least 30 minutes, but preferably overnight. Lasts a long time in a glass in the fridge and fits most things.

Spizy chicken with apple jam & grated apple and fennel

APLEMARMELADE
Peel the apples and cut into cubes of about 1 cm. Bring to the boil and let it boil gently until the apples are tender. Stir with a whisk and the apple jam is ready. Cool down.

GRATED APPLE AND FENNIC SALAD
Grate or cut apple and then into thin sticks (julienne). Finely chop the green dill-like tip of fennel and mix with the apples. Season with a little lime and olive oil.

 

Beefy sausage with red onion jam

RED ONION MARMALADE
Cut red onion into thin slices and cook gently with sugar and vinegar in a saucepan with a lid for 10 minutes. Remove the lid and cook until all the liquid has evaporated, approx. 5 minutes.

Cheesy chili with cheese sauce, nachos and jalapeno

CHEESE AND JALAPENO SAUCE
Melt butter and add flour. Pour in the milk while stirring while the pot is on the plate. Bring to the boil and add the cheese. Let it melt. Finally, add jalapeno and season with salt and pepper. If you want a stronger or weaker variant, adjust with jalapeno.
